Beast's World Famous Spiced Potatoes

Beast's World Famous Spiced Potatoes

Cold winter mornings require warm hearty food. This dish is great anytime, though. The kids love it, and it's simple to make. I've shared this recipe with friends across the globe, and everyone has loved it!

INGREDIENTS
Oil for coating the pan
1 lb smoked sausage
1 medium onion, diced
1 medium bell pepper, diced -or- one bag of frozen diced mixed peppers & onions
4-5 potatoes, diced
2 Tbsp Thyme
2 Tbsp Sage
2 Tbsp Oregano
1 Tbsp Marjoram
1 Tbsp Rosemary
1 heaping tablespoon Garlic, minced
salt & pepper to taste

Tabasco, Cheese & Ketchup optional

DIRECTIONS
Preheat a large skillet coated in oil. Toss in the onions and potatoes, and cook until almost soft. Add the sausage and seasonings, and cook until golden brown, stirring often to get a good consistent browning throughout, and to prevent burning.

Dish into bowls, and serve. I like to fill a bowl half way, add a slice of American cheese, fill the rest of the way. The heat of the potatoes makes the cheese melt. Then top with a dash or three of Tabasco, and some ketchup. Stir and enjoy!

Scottish Shortbread Recipe

Scottish Shortbread Recipe

What's better for a Yule-tide celebration (or, if you are like me, ANYTIME celebration) than authentic shortbread? Simple, yet delicious. Goes great with earl grey tea.

INGREDIENTS
2 cups butter, softened
1 cup packed brown sugar
4 to 4-1/2 cups all-purpose flour

DIRECTIONS
Preheat oven to 325°. Cream butter and brown sugar until light and fluffy. Add 3-3/4 cups flour; mix well. Turn dough onto a floured surface; knead for 5 minutes, adding enough remaining flour to form a soft dough.
Roll to 1/2-in. thickness. Cut into 3x1 in. strips. Place 1 in. apart on ungreased baking sheets. Prick with fork. Bake until cookies are lightly browned, 20-25 minutes. Cool. Yield: about 4 dozen.
